A. Probiotics have been used for centuries in various forms throughout the world. Kefir specifically has been used throughout Eastern Europe and the Caucasus. In the US, kefir has been consumed by health conscious natural foods consumers for decades.

2. Q. What is the history of Evolve and the company behind the brand?
A. We’re a family owned and operated dairy company based in New York who has been in the milk business for over 90 years. Evolve Kefir is the latest addition to the Elmhurst Dairy and Mountainside Farms family of products.

3. Q. Where is Evolve available?
A. Evolve Kefir launched at the end of 2008 and is now available in most of the grocery stores in the NY Metro area. It can now also be found in many Whole Foods and natural foods stores in California. Our distribution is increasing quickly. Check the store locator to find a store near you.

4. Q. What is the shelf life of Evolve?
A. Evolve Kefir is produced with 60 days of shelf life.

5. Q. What makes Evolve different from other Kefirs?
A. Evolve Kefir is smoother and more fluid than a traditional kefir with a softened tanginess. The Evolve team has spent years developing its formula to be more “yogurt smoothie like” and thus appeal to the entire family. Also, Evolve contains some of the most tested probiotic cultures at efficacious levels. We are not compromising on the quality or the quantity of the cultures we use.

6. Q. What are probiotics?
A. Probiotics are living micro-organisms that, when ingested in sufficient numbers, benefit the health of the consumer. Once in our intestines, these natural and friendly bacteria help balance our gut microflora and support our immune system. Evolve Kefir contains premium probiotic bacteria that have proven efficacy on gut health and the immune system.

7. Q. What is “kefir”?
A. Kefir is a fermented milk drink made from inoculating milk with kefir grains. Fermentation of the lactose yields a sour, carbonated, slightly alcoholic beverage, with a consistency similar to thin yoghurt. The word kefir is said to have originated from the Turkish word `Keyif' which means `good feeling.'

8. Q. Is it safe to take probiotics when pregnant?
A. During pregnancy, mothers-to-be often have digestive problems. Consuming Evolve Kefir regularly is a safe and effective measure that may help to prevent small digestive disorders and make you feel better.

9. Q. Should mature adults eat probiotic products?
A. As we age, our intestinal microflora gradually changes and our immune system tends to go into decline. Probiotics may be able to counteract or slow down this process. The probiotic strains in Evolve Kefir have been specifically selected to improve your immune function. Clinical studies in a number of countries have shown a particular improvement in the immune system of mature adults.

A. Yes, Evolve is a perishable dairy product.

11. Q Can the probiotics in Evolve cause allergies?
A. We are not aware of any allergic reactions to our probiotics. In fact, we have studies that show some of our strains may alleviate seasonal allergies due to pollen. Of course, other components of Evolve Kefir may cause a reaction. We would recommend allergy sufferers to read the ingredient lists carefully on all packaged food products.

12. Q. Why do probiotic bacteria have such long and difficult names?
A. Like people, most bacteria have a first name and a last name e.g. Bifidobacterium lactis and Lactobacillus acidophilus. For those of us who do not see or use the names very often, they can be difficult to remember.

13. Q. Can the probiotics in Evolve cause yeast infections?
A. There is no link between yeasts and probiotic cultures apart from the fact that they are both microorganisms. On the contrary, the presence of probiotics in the digestive system may limit the development of undesirable microorganisms, such as yeasts, simply by competitive exclusion.

14. Q. Can the probiotics in Evolve be ingested by gluten-intolerant consumers?
A. Yes, Evolve is suitable for gluten-intolerant consumers.

15. Q. What is the recommended daily serving of Evolve Kefir?
A. The recommended serving is 1 cup a day. Studies have observed beneficial health effects from 1-5 billion bacteria/ day, depending on the selected probiotic. Higher doses are not harmful, but are unlikely to give additional benefits.

16. Q. When should I drink evolve?
A. You can drink Evolve Kefir at any time and experience its beneficial effect. For maximum benefit, consume Evolve on a daily basis.

17. Q. Is it possible to overdose on Evolve?
A. No, you cannot overdose on probiotics – they are among the safest foods that exist.

18. Q. How long will it take before I notice a benefit?
Everyone is different. But, in our lifetime, most of us will have periods when our immune system is challenged. This could be the result of stress, travel, poor diet or germ exposure at day-care, school and work. At such times, we may notice that Evolve Kefir improves our health. If our health is already good, we may choose Evolve Kefir for maintenance reasons. Either way, Evolve Kefir will help balance your gut microflora and support your immune system.

19. Q. How often should I eat probiotic products?
A. One dose a day. Probiotics are only ‘visitors’ in your intestine and will disappear, together with their health benefits, when not consumed regularly.

20. Q. Are probiotics suitable for babies and small children?
A. Probiotics can be consumed at all ages as part of a balanced diet. Before birth, a baby’s gut is sterile and the immune system immature. The gut microflora of a baby begins to develop at birth. Breast-feeding, or consumption of an infant formula with probiotics, continues the development of a baby’s gut microflora. When solid foods are eventually introduced to the diet, you can include small portions of a probiotic product in the diet. As a child grows and changes diet, the microflora in the gut develops accordingly. By the age of two or three, most children have a fairly stable intestinal balance. Their immune system has also matured considerably. Both may nevertheless benefit from a continued daily portion of probiotics.

21. Q. Should I consume Evolve Kefir when I am on antibiotics?
A. Antibiotics are designed to kill off disease-causing bacteria; however, during this process, they destroy many of the gastrointestinal system’s existing microflora – beneficial bacteria that are the body’s natural first line of defense against harmful invaders. This may lead to intestinal upset or weakened immunity. In a clinical study (J. Med. Micro. 2009.), it was shown that consuming a probiotic blend that included L. acidophilus NCFM during and after antibiotic therapy can result in the maintenance and restoration of friendly bacteria in your intestine.

22. Q. Is Evolve Kefir free of GMOs and BSE/TSE?
A. Yes they are. Our probiotic lactic acid bacteria have not been subject to any genetic modifications described in existing GM regulations. The milk used in Evolve Kefir is produced with no added hormones or antibiotics.

23. Q. What is Lactobacillus acidophilus?
A. Lactobacillus acidophilus NCFM™ is of human origin and was first isolated by scientists at North Carolina State University in the early 1970s. NCFM™ stands for “North Carolina Food Microbiology”. The strain was isolated in the food microbiology laboratory at North Carolina State University and it was named after this facility.

24. Q. What does acidophilus specifically do?
A. Human studies have demonstrated several GI and Immunity benefits from L. acidophilus:

25. Q. Is there really a difference between acidophilus strains?
A. The suggested health benefits of probiotic strains are many, and some effects are better established than others. It should, however, be noted that each probiotic strain has its own specific health benefits, and no probiotic elicits all the health benefits proposed. Furthermore, when one probiotic strain has a certain health benefit, it cannot be assumed that another strain, not even when of the same species, has similar properties.

A. There is no evidence that the probiotics in Evolve can help with constipation.

27. Q. How can Evolve help diarrhea?
A. One study documents that a higher proportion of children fed probiotics were free of diarrhea than those in the control group. Diarrhea incidence was significantly lower in the probiotic group. Recently, a study published in the American Academy of Pediatrics Journal, showed the beneficial effects on cold and influenza-like symptom incidence and duration in children.

A. The lead researcher on the study was Greg Leyer PhD, from the Department of Research and Development, Danisco, Madison, Wisconsin. 31. Q. What was the sample size of this study?
A. 248 (children (3-5 years old)

32. Q. Were the results Dr. Leyer’s study significant?
A. Relative to the placebo group, single and combination probiotics reduced fever incidence by 53.0% and 72.7%, coughing incidence by 41.4% and 62.1%, and rhinorrhea incidence by 28.2% and 58.8% respectively. Fever, coughing, and rhinorrhea duration was decreased significantly, relative to placebo, by 32% and 48%. Subjects receiving probiotic products had significant reductions in days absent from group child care, by 31.8% and 27.7% compared with subjects receiving placebo treatment.
